Your point that people vary in what they want at a wedding is well-taken. The
idea that Jewish culture is far more diverse than it once was is also
well-taken.
But there are, in fact, Jewish traditions. So, perhaps not, "Jews don't do
that," but certainly, "that would not be part of a traditional Jewish wedding"
is reasonable. Of course, even with tradition, one finds some customs can be
quite different--if still within recognizable boundaries--depending on
Ashkenazic, Sephardic, and variations therein.
