Electronic music can be as real-time as anything. It depends greatly on what,
exactly, is pre-arranged and what isn't. It's possible to keep things fresh by
throwing in some elements of randomness as well. And 'taped' isn't necessarily
taped- it can be MIDI generated. A smart programmer knows where and when to
throw a few wrenches into the gears.
Of course what I'm syaing is way OT applying not necessarily to Jewish music,
but to music in general.

PS In town (Chicago) there is a Jewish music performer, Rabbi Sasson Natan,
very popular in the Sephardi community who lives by what he can MIDI generate.
Not bad, either.

If I want to hear recorded music I'll buy a CD. What I want when I go to a
concert is LIVE music and I feel cheated when there's some taped stuff included
in the performance. I guess this sounds pretty blunt but I've been cheated a
few times now and don't like this growing trend. Give me live mistakes, a few
reed squawks and missed notes any day.
