Dear Geraldine,
I know you're looking for fiddlers in "any genre of non Western music."
I'm not sure if this suggestion fits your "non-Western" specs exactly, but
fiddlers Hank Bradley and Cathie Whitesides, of Seattle, Washington, would
give you an astounding array of styles, just between the two of them:
American "old-time," contra, Irish, Romanian, Serbian, Greek, and maybe more
that I'm not remembering at the moment. And they can back each other up on
guitar, bouzouki, fiddle...
