I've seen this video, and think it needs to be approached with some caution.
It's based on the work of Nathan Vizonsky, who was a dancer and
choreographer operating in Chicago in the 30's- he choreographed the pageant
"Romance of a People" for the Chicago Century of Progress Exposition. As
such, it is very codified and choreographed, and partakes of a certain
nostalgic gilding, which should be taken with a little salt, at least.
A better film resource, though not a teaching video, is the wedding scene
from "Yidl mitn Fidl" which, while choreographed to a certain extent, is
probably closer to the source. Also the dance segments from the Dybbuk.
