Lori, at S-W events Deborah usually drafts people she knows have a least
a tiny bit of knowledge - "Roger Reid, Please Report to the Front", she
aclls as  slink back toward the cake and coffee.  It's been a long day,
my ankles are tired, I was up at 6, it's going on 10...

But in the end I have my khoyf and out of kavod for my morah I dance.
I would not call it instruction, but it is not a free-for-all.  She gets
as many people with at least a clue as she can (I'm usually on the wrong
foot, but at least I know it) and gives gentle guidance as needed.

It actually seems to work rather well.  Once it's going, I pull my sweaty
palms out of the group and head back to the cake.
