I used to be a baker. You can use any challah recipe, just halve the
amount of sugar called for: so 1 cup of sugar becomes 1/2 cup of honey.
Depending on your sweetness jones, you can even third that to 1/3 cup of
honey. I'd use a light honey for a challah, like an orange blossom. The
darker the honey, the heavier the taste.
P.S. You can also use fructose. With fructose, you would want to halve to
two-thirds it. So one cup of sugar would be 1/2 cup of fructose or 2/3 cup,
depending on taste. Add a little more water or milk and a little more oil or
butter, to your recipe, because fructose can burn. Personally, I stick with
the honey!!!
I know, I know, I'm not Helen, but I just couldn't resist answering
