Many of the "old Cantors" recorded only with organ accompany ment.
If you are looking for "true' acapella' liturgical music, there are many
recordings of Moroccan, and other Judeo-Arab Cantors that recorded in that
fashion.
Most of the Morrocan-Sephardic recordings such as , "Songs and Ballads Off The
Moroccan Jews As Sung By the Women of Tetuan, Morocco", though not cantorial,
contains many song pertaining to the various religious holisays and feasts
such as Pesach, Purim, weddings, etc.
The (traditional) Yemenite recordings of 'sacred' music have no
instrumentation, however some do use metal cans, used like drums, for rhythm.
