MIDI, letting you transcribe.  It's a little limited in features, but you 
can definitely compose, arrange, and print music, within limits.  Finale is 
really the standard for producing sheet music professionally.

I have heard that Sibelius is supposed to be the most outstanding program of 
this sort.  I haven't used it, but I'm sure someone else on here could chime 
in with their take on it.
