Well, Meris, for familiar I'd probably start with Debbie's Kaddish d'Rabanan 
and go on to any of several nice Aseh L'cha Rav melodies; perhaps your 
students already know one of them.

Then, if you want a new one that does not fall under the description of 
being "well-known," but whose words you may find especially appropriate for 
honoring your day school principal, you may want to consider "Teachers' 
Blessing;"  the Hebrew part can be sung as an easy and lively 2-part round:

May you be blessed, may you be strengthened
As you have blessed and strengthened our students.
And may your life be filled with peace.
May you have everything,
May you have everything you need.

Straight from your heart you teach the children.
You are the link that binds generations.
You are a friend to those you teach.
Aseh l'cha rav u'k'nei l'cha cha-veir.

...Our day school principal just won an award for jewish education and I've 
been asked to have the whole school sing a few things in his honor......... 
I'm thinking pretty well known tunes that we can just 'pick out of our hat.' 
    What would YOU do?
