 Jews dominated the Central Asian Music music scene as well-- specifically 
Transoxania (Bukhara.Tashkent, etc.).  Ted Levin's book One Hundred Thousand 
Fools of Gold is an amazing ethnomusicologic account.
In the book, one Jewish performer explained to Levin that it must have been the 
chicken soup.
