Ukraine wedding

Was reading another wedding description from a Yizkor book for a shtetl in 
the Ukraine around the turn of the century.  The description emphasizes the 
fact that this was an ?average? wedding and in detail describes the 
proceedings including the role of the musicians and how they were paid.  It 
mentions that the food preparation was done by ?the servants.?  Was it 
normal for the average Jewish family to be able to afford servants.  I 
always had the impression that most people lived in poverty.  Is this not 
the case?
