I have a compendium of written gypsy music "The Hungarian Club Date
Handbook" copyright 1972. 
The author, Irving Kritchmar, probably Jewish, is described on the
inside cover- 

"Irving Kritchmar is considered one of the greatest performers of
gypsy music in the world. He has appeared in motion pictures and on
television many times, demonstrating his superb ability to perform
this special kind of music. His LP "In a Dim Cafe" is a popular seller
throughout the world.
He now resides in Rockland County and is in constant demand..."

As to modern American players, Mary Ann Harbar comes to mind. She is a
member of the Houston bases band "The Gypsies" and has written on the
subject- "A Dark Flame Still Burning", Strad magazine May 1993. She
also just wrote a wonderful book on playing Gypsy Violin (with CD)put
out by Mel Bay. Don't know for sure that she is Jewish but probably.
