For many good tapes and excellent music contact the Cantors Assembly 
Office for their catalog. In particular the Baal Tefillah series should 
help you learn many services. Call 212-678-8834.

I do not know if there is a cantorial school in California. Contact the 
University of Judaism and ask them, they may have a preparatory division 
for lay people and part of a program that finishes in New York.

You might want to find a good cantor and study privately. Contact Joe 
Gole 213-556-5609 at Cong Mogen David in LA he may be helpful.
