As to why Halacha forbids musical instruments to be played on Shabbat,
when  quite obviously music was part of biblical/Temple worship ---  my
understanding is that it's not the playing of music that's forbidden.
Rather, tuning your instrument, changing a string, etc. fall into
catagories of "fixing," "completing," "changing the state of" --- which
are some of the levels of "work" that are forbidden on Shabbat.

So, like many halachas, we avoid playing music so that we don't come to
transgress an actual prohibition. And  miss out on a lot of beauty.

This business of "building a fence around the Torah," has noble
intention, but it  sure has given rise to heck of an edifice being used
to keep Jews seperate from each other.
