I don't.  I think it borders on hypocritical to drink water (yes, I know we 
have to sing all day) on Yom Kippur while acting as Shaliach Tzibbur for a 
congregation who is fasting (and are there all day, too.)

I prepare for YK well in advance, drinking 2-3 quarts of water a day for two 
weeks leading up to the day.  As the day wears on, it does get harder, but 
sucking on the inside of my cheek and moistening my lips helps a great deal.  
I have served conservative synagogues for and have had to sing non-stop 
(nearly) from 9 AM to 7:30 with a short afternoon break.  It can be done and 
I know many, many who would never consider doing it another way.

Sorry for the rant.
