Noah (the story of, that is) has plenty of songs out there: Of course,
there's the classic "Rise and Shine," and the "Unicorn Song" (which,
though adding a bit of secular mythology to the story, is still a lot of
fun), not to mention "Who Built the Ark?"  And depending on the age of the
folks you'll be songleading, there's Sting's "Rock Steady." (From his
album "Nothing Like the Sun") which is something of a modern retelling.  
I also heard a charming children's song,
entitled "Noach," on the second album of Columbia/JTS's Jewish a capella
group, Pizmon (the album is called "Tovim HaShnayim Min HaEchad/Two are
Better than One," and is available by contacting the group at
pizmon (at) columbia(dot)edu).

As to Adam and Eve, I'm stumped for the moment.  A Catholic friend of mine
from college wrote a neat folksong about the story called "Get Out of that
Tree," which would be good for older children, but it'll take quite a
while for me to retrieve it, if I can get a copy at all.  I'd be
interested to see what's out there.
