Hakafa literally means "to encircle," or "to round off" or "circle around"
and I believe it is also used to mean
"orbit" when it's being used as a verb. Thus it is a literal description
of the activity involved in making hakafot, or circles around the bima (of
course, that's hard to do in most synagogues these days, where the bima
isn't in the center anymore.)
