I would like to echo the suggestion of going to Transcontinental, where there 
is such a wide variety of music that it could be overwhelming for a choral 
conductor who does not know Jewish music at all--- therefore, instead of just 
presenting the catalogue, why not call Transcontinental and order some single 
copies for her to peruse? Perfect for Hannukah is Joshua Jacobson's fabulous 
arrangement of Jagoda's Ocho Kandelikas. It is also hard enough that the 
conductor you described would probably be pleased with it. As in all of 
Jacobson's arrangements, the voice leading is perfect; and in this 
arrangement there is a wonderful juxtaposition of rhythmic motives in the 
different voices. To me it is a splendid arrangement for another reason: it 
is a total joy for the performers and for the audience. 

I have also shared some Rossi with High School conductors looking for early 
Jewish music. Again, Transcontinental, which also has plenty of audio 
available on their website.
