Part of the reason (one of many reasons) why people put a dash in "G-d" is 
because they don't want people throwing out, in the garbage, a piece of 
paper with G-d's name on it, things even associated with G-d's name.

(Technically speaking, this is a valid concern.  While one may be permitted 
to _erase_ the letters GOD, one may not treat the paper overly disrepectfully).


My assumption here, and I am no expert, is that the Artscroll editors can 
make a fair presumption that since the siddur already has Eloheinu, etc., 
spelled out in Hebrew, that people will not throw the siddur into the 
garbage, and so spelling G-d with an 'o' in it can't possibly do any harm.


My two speculative cents!
