My students (I teach about 100 kids and adults a year in a class setting) get 
a sense of great satisfaction to know that when they finish with the sof 
pasuk, etnachta and katon groups they've learned enough to get them through 
75% of their haftarah (or Torah portion).  I also rely on using the V'ahavta 
and Vayomer paragraphs from the Shm'a.  We chant these at our synagogue, so 
most people know how to sing them, then I play a matching game (especially 
with the adults, who have one of those "aha" moments when they figure out 
they already know trope, just not how to apply it!
