You might want to get in touch with Micah Harrari, who builds what he
contends are reconstructions of a biblical harp and psalter (kinnor david).
In fact, the harps he makes look suspiciously like the harp on the Guinness
bottle, but he is very knowledgeable about biblical instruments and music.

I would also suggest you look at Idelsohn's book "Jewish Music".  It has a
section on Biblical music.
