18th c. instrumentation

Can anyone tell me what the instrumentation might have been in an early 
18th century Jewish music group in (what we now call) Germany?  
In accompanied vocal music, would there have been instrumental breaks or 
would it have been sung straight through?  Is there any way of knowing this?
