I would suggest that you go to a Jewish library and
have a look at the "Hebräisch-orientalischer
Melodienschatz" by Idelsohn. This monumental work of
Jewish Musicology is a comprehensive anthology of the
traditional music from all branches of Jewry and should
be a good starting point for your research. You
probably also would like to read some chapters from
Idelsohn's "Jewish music in its historical
development."
You should be aware that the term "Sephardic music" is
a rather broad description: it includes everything from
Yemenite to Dutch-Portuguese music. Could you be more
specific regarding your field of interest?
