1. Salamone Rossi was a Jewish composer living in Mantua at the beginning of
the 17th century. He was a violinist in the employ of the Gonzagas
and composed some fabulous trio sonatas (the first in the literature to be
published) and other instrumental works. Many of them have been published.
There is a thematic catalogue available from European-American Music,
compiled by Newman and Rikko.
2. Paul Ben-Haim, Israeli composer, wrote some violin music. Check out the
Sephardic Lullaby (violin and piano) or the Songs without Words. Israel Music
Publications publishes his stuff. Theodore Presser is the American distributor.
3. There's also Ernst Bloch, but that's not intermediate level.
4. Look for stuff by the Russian Jewish composers at the beginning of
this century. Especially the group from St. Petersburg.
