Scott, Welcome to the list.  I would suggest that you have a look at
catalogs from Beit Hatefustot and the Jewish Music Research Centre and the
Hebrew University of Jerusalem.  Also groups like the Camarata Singers from
Boston, The Voice of the Turtle and The Western Wind Ensemble> of New York
have all come out with good recordings of Sephardic music in the past 2
