Does anyone know who composed the 'traditional'
Shalom Aleichem?
Lecha Dodi?
Tzaddik Katamar?
Ahavat Olam?
Oseh Shalom?
Eyn Keyloheynu?
Adon Olam?

In response to your question, I only know about the origin of a couple of the 
melodies -- which I found in a book called "The Jewish Songster, Part I" 
edited by Israel and Samuel Goldfarb, originally published in 1925 by 
Congregation Beth Israel Anshe Emes in Brooklyn, NY. (Already that's probably 
more than you want to know.)

Anyway, the Sholom Aleichem tune "traditionally" sung at the Shabbat dinner 
table was composed by Israel and Samuel Goldfarb -- and is originally written 
to be sung A-B-B-A, rather than the A-B-A-B musical arrangement of the verses 
that has become prevalent.

As an aside, Israel Goldfarb also composed the tune we all know and love for 
the Friday night Kiddush.

Also, I believe the familiar Tzadik Katamar tune was composed by Lewandowski.
