With younger kids (3rd-5th grade), I use a parachute.  That way, there's no 
hand-holding, the clumsy kids feel less clumsy because no one can see their 
feet, and it's especially exciting when we go into the center and the chute 
is overhead.  With older kids, I would remind them that they're going to 
want to know how to dance the hora at their friends' bar/bat mitzvah 
parties.  It seems to work.
