Yes, V'shamru is in the Torah.  That's why it's in Trop.

Nusach and the modes and motives that comprise the various nusachot (for 
different times of day or occasions) are actually a later invention than trop 
and can often be shown as parallel within the various cantillation systems 
for the various biblical books.  

Hope that begins to answer the question <G>.  There's a book called Jewish 
song in America (I think by Levine) that is quite good in both explaining 
nusach and its connection to trop (and church chant for that matter!).  Lots 
of examples and a three tape supplement.  Idelsohn's Jewish song in America 
is the classic on nusach, but it's both more involved and a bit more 
difficult a read.  Been through both several times!

There is a book called Niggun that may fit the bill for your first question.
