That's a toughie.

For a long, popular-style history you may wish to try the latest edition of
Peter Gradenwitz's "The Music of Israel."  It's kind of flashy and stilted,
and it's not really recognized in the academic Jewish music circles I've
encountered, but from what I've read of it (which is by no means the whole
thing), it seems adequate.

If you don't mind your history ending c. 1972, there's a very good 50-60
pp. article by Hanoch Avenary in the Encyclopedia Judaica (under "Music," I
believe), with lots of great illustrations.
