  I don't know the ages of your choir members... but unless they know 
Hebrew or are already familiar with the words to Ein Keloheinu, I think 
it's too challenging for them to learn quickly.  I'd try something like 
Shabbat Menucha (a.k.a. On Shabbat, Shabbat) or, if you want Hebrew, 
Friedman's Oseh Shalom with a tempo change the second time through.  --
