Two suggestions:

Steve Dropkin has a very singable R'tzei on his CD "Innerpeace" which uses 
the beginning of the Hebrew text on the chorus and English for the verses. It 
would work with just a guitar (of course you can't go wrong adding percussion!)

If you're looking for something less rousing, and totally in Hebrew, Julie 
Silver's version on "Beyond Tomorrow" is more contemplative and inlcudes more 
of 
the text.
