At interfaith Thanksgiving services, I've used:
"Ilu Finu" (which is mostly in English) by Rachelle Nelson
"Lord, I Sing My Thanksgiving" by Kirk Dearman
"For The Beauty of the Earth" by John Rutter
"May God Go With You" by Douglas Wagner
If you go to a general choral sheet music store, you'll probably find lots
to choose from. For instance, "Gifts From God, A Harvest Anthem" and "In
Gratitude We Come" both by David Lantz III.
All of these songs, however, are designed for choirs. If you want songs
that are easy to catch on to, you can always go with the old standby, "Let
There Be Peace On Earth" or a simple Hodu L'Adonai or Oseh Shalom (which at
least half the combined congregation will have no trouble learning).

P.S. I've got a new Hodu L'Adonai for children. It's got a verse for
Thanksgiving, for Shabbat, for Mothers/Fathers Day, for greeting a new day,
etc.

Birkat Kohanim in English, Hebrew or a combo of both languages
works...sounds like you want pop music...how about Julie's Silver's lovely
