B'emek Yisrael is actually B'emek Yizrael, which means in the Jezeral Valley. 
It is the part of Israel where settlers first came and began reclaiming the 
land (because it had all been swamp). That is the actual version of the song, 
but people tend to sing it "B'eretz Yisrael", meaning, obviously, in the land 
of Israel. I have no idea why the switch came about, except that I know it 
makes more sense to little kids.
