Judy Caplan Ginsburgh's 'Original Songs for Children' -- parodies on good ol' 
folk songs

Rachel Buchman's 'Jewish Holiday Songs for Children (pub. Mel Bay) -- 2 gems, 
one is a Yiddish song (in English, too), the other is an American folk song.  
Get the book and CD.  Well worth it!
