Basing your services on an hourly rate is one way of looking at it.  But (my 
degree is in Economics and Music) I think a more practical method is looking 
at 'the market' for your services.  You may end up asking for too much when 
you have  to learn something special or new, and, on the other hand, if your 
experience reduces your preparation time, then you'll be asking for less and 
less the more experienced you are.  And, of course, the 'better' you are 
(vocally, musically, Hebraically, Judaically) the more you can justifiably 
ask for from Congregations that appreciate and can afford to pay for your 
abilities.
