Dear Brian,
For Yom Hashoah, certainly Ani Ma'amin (either the traditional version or the
setting by Yosef Grosz) is a must. Also consider S'brent (a Yiddish tune
about the burning of a shtetl) by Mordechai Gebertig. Don't forget Lisa
Glatzer's "The Last Butterfly"
Also I do every year "Playing for Time" off of the first B'shert CD. It's in
english and hebrew.
