El Male Rachamim is a must, psalm 23 and Esa Ainei (I don't know how to
spell it in transliteration) are pretty common, as are other appropriate
psalms. I think you'd want to get hold of a Cantor's or Rabbi's Manual.
I'm sure those who have actually done funerals can give more details. I
only have a computer at work which is not where my notes are.
